About Chef James Avery
Chef James Avery is a chef, restaurateur, and hospitality strategist with over two decades in the industry. He trained at the Art Institute of Fort Lauderdale and built his career working alongside chefs including David Burke, Michael Mina, and Gordon Ramsay. His television work spans multiple seasons of FOX’s Hell’s Kitchen, where he served as Blue Team Sous Chef in Seasons 11 through 14 and returned for Seasons 23 and 24. Beyond the camera, Avery owned and operated two acclaimed Asbury Park restaurants — The Bonney Read and The Black Swan — before successfully exiting both. He now runs Nicely Done Hospitality, a consulting and partnership firm for restaurant groups and operators, and founded The Modern Brigade, a mentorship community for cooks, chefs, and emerging restaurant owners.
Episode Overview
Andre Natera sits down with Chef James Avery to pull back the curtain on what it actually takes to thrive in Gordon Ramsay’s Hell’s Kitchen — and what that high-pressure environment teaches you that a normal kitchen never will. James breaks down the reality of working as Ramsay’s right hand, what leadership looks like when the stakes are real, and how those lessons translate into running restaurants and building teams long after the cameras stop rolling. The conversation also covers James’s wellness journey, his philosophy on mentorship, and what most chefs misunderstand about the business side of their careers.
