About Hanalei Souza

Hanalei Souza is a line cook turned sous chef, the creator of Lady Line Cook, one of the most widely followed culinary community accounts on Instagram, and the author of the self-published memoir “Nice Work, Boys!” She started cooking professionally in 2018 and built her career in restaurant kitchens while simultaneously creating content that gave an honest, unfiltered window into what daily kitchen life actually looks like from the inside. During the pandemic in 2020, with restaurants shuttered and the industry in freefall, she launched the @ladylinecook Instagram page as an anonymous outlet for kitchen humor and memes, never intending it to become a large platform. It became one anyway, growing into a worldwide community that connects culinary professionals at every stage of their careers.

She has since come forward with her identity, been promoted to sous chef, and used the platform to document the realities of leadership and kitchen culture with the same candor that built the account in the first place. Her memoir “Nice Work, Boys!” draws on her experience working and earning promotions as the only woman in male-dominated departments, beginning with a promotion at 21 in the ski industry and carrying through her culinary career. The Lady Line Cook platform now serves as both a humor outlet and a serious industry resource, one of the rare culinary social media accounts that reflects what real cooks actually experience rather than the polished version served to the public.

Episode Overview

In this episode, André Natera finally sits down with Hanalei Souza, the woman behind the Lady Line Cook Instagram account that has become a genuine culinary community for cooks worldwide. The episode covers how the account started anonymously during the pandemic, what it felt like to build a large following without anyone knowing who you were, and the decision to come forward and own the identity publicly. Souza talks candidly about what it took to earn her place in professional kitchens as a woman, the specific moments that shaped her understanding of leadership, and what writing “Nice Work, Boys!” required her to process and articulate about her own experience.

They also go deep on what the Lady Line Cook community actually represents, why humor is one of the most effective tools for processing the reality of kitchen work, what the sous chef role demands that the line does not prepare you for, and what Souza has learned about being a leader who is also still actively learning the craft. It is a candid, grounded episode with one of the most authentic voices in culinary social media today.
