About Aaron Bludorn & Allie Peña
Aaron Bludorn is the chef and owner of the Bludorn Hospitality Group in Houston, Texas. He grew up in the Pacific Northwest, trained at the Culinary Institute of America in Hyde Park, and built his career working under Douglas Keane and Daniel Boulud, eventually rising to Executive Chef at Café Boulud in Manhattan. In 2018 he competed on Netflix’s The Final Table and earned the Star Chefs Rising Star Community Chef Award. In 2020 he moved to Houston and opened Bludorn, followed by Navy Blue in 2022 and Bar Bludorn in 2024. He has been a James Beard Award semifinalist for Best Chef: Houston and for Outstanding Hospitality.
Allie Peña is a Houston native who trained at Culinary Institute LeNotre. She joined the Bludorn team early in her career, working through every station before being promoted to Executive Chef at Bludorn Houston. Her cooking is rooted in the Mexican-American culinary traditions she learned from her grandmother and mother, and her rise through the Bludorn kitchen is one of the more direct examples of what intentional mentorship in a restaurant group can produce.
